Black Bean Burger

A few months back I decided to cut out meat from my diet. I felt like I needed to make a change and this was something that I felt strongly about. It was a drastic move but it forced me to be a bit more creative with my cooking and what I put on my plate.

After a couple months I came to the realization that I did miss meat and dairy but that I would limit my intake. I’ve cut down to having meat once a day, if that. And I have a couple family dinners each week that are meatless. And this is one of those meals. My daughter loves them and I think my husband likes them too 😉 He pretends like he doesn’t but his plate was pretty clean after this meal. lol

So here it goes……………………………………………………………….

Ingredients

  1. 1 can organic low sodium black beans (rinsed and drained)
  2. 2 eggs
  3. 1 cup panko
  4. 1 zucchini grated
  5. 1 tsp cumin
  6. 1 tsp salt
  7. 2 tbsp butter or olive oil
  8. optional toppings: buns, avocado, cheese, salsa, lettuce, tomatoes, etc

Recipe

  1. Add beans, grated zucchini, eggs, and spices into food processor
  2. Process well, pausing to scrape down the sides as necessary
  3. Add panko and mix in by hand. DO NOT put this into the food processor. I don’t know why but it just doesn’t come out right if you do this
  4. Place mixture into the fridge for 5-10 minutes
  5. Heat butter or olive oil over medium heat in pan
  6. Form patties and cook for approximately 5 minutes each side*
  7. Enjoy with or without a bun, and the toppings of your choice

*patties will not decrease in size like a normal burger patty so be sure to make it the size that you want.
