Mini Apple Pie

So my husband and I recently bought a new home and we had a couple apple trees. A few months after we moved in, the empty lot next door to us went up for sale and we made the decision to buy it. Although we have no idea what we’re going to do with it at this point, we realized that we now were the proud owners of 11 apple trees!!!

Needless to say I’ve been trying to figure out what to do with them. So since I love dessert but I also love to eat relatively healthy and I have a crazy sweet tooth, I decided that single serve was the way to go. These would make a great Fall dessert or an awesome addition to any Thanksgiving dinner.

This recipe makes 4-6 servings depending on how much apple filling you put in each

Ingredients:

8-10 small apples (almost mini size)

1 tbsp grass fed organic butter

1 tbsp honey

1 tbsp pure maple syrup

1/2 tsp nutmeg

1/2 tsp cinnamon

1/2 tsp brown sugar per pie

4-6 premade mini pie crusts

whip cream for topping (optional)

  1. Peel, core and dice apples
  2. melt butter in saucepan over medium heat
  3. add apples and stir to coat
  4. add maple syrup, honey, cinnamon, and nutmeg
  5. stir to coat all apples
  6. decrease to low heat and allow apples to simmer until soft, approximately 5 minutes
  7. spoon mixture into mini pie crusts and serve immediately
  8. top with 1/2 tsp brown sugar and whip cream (optional)

*If you premake this mixture you can heat the oven to 350 and then add mixture to pie crusts. Bake for 5 min to reheat and then serve
