Crock pot Fritata

I don’t know about you but I feel like most mornings are hectic in my house. I get up earlier than everyone else because it’s my only time for sanity and silence. I have a 3 year old and a 4 month old, so I’m sure you can guess what my house is like most mornings. And I have a husband who gets off to work early too.

I like to have breakfast on the table especially if it’s one of my mornings where I have to be at work and gone before everyone else. So here’s what I’ve come up with and let me say that it was a total hit!!

Ingredients:
-2 cups veggies. Really anything you have hanging around and that’s easy to chop. This morning I used broccoli and onions because that’s all I had. You could use tomatoes, mushrooms, bell peppers, etc.
-bacon, ham, sausage, etc. Today I used 2 slices of bacon because that’s all I have. I just got back from vacation so the fridge is kinda bare
-5 egg whites, 5 eggs
-1/4 cup cheese (cheddar or feta would be my top choices)
-spices of your choice mixed in with eggs

Directions:
1. Cut meat and place in pan until cooked
2. Spray bottom of crockpot with nonstick spray
3. Add veggies so they lay evenly across the bottom
4. Mix eggs in a bowl and then pour over veggies
5. Top with meat choice
6. Cook on high for 2 hours
7. When finished cooking, top with cheese and cover for 5 more minutes to allow it to melt
8. Enjoy!!
