Healthy Eating on the Go…Yes it’s possible!

A couple months ago my husband and I took our daughter to Legoland for the first time. She had such an amazing time but I knew I would run into the usual amusement park problem…what to eat?! Although a lot of places have gotten better about the options that you have it’s always hit or miss. Here was my solution to that problem and luckily there was a pretty good selection at Legoland.

I started at the salad bar and loaded up my plate with veggies. Lettuce, cucumbers, tomatoes, carrots, corn, marinated veggies, and more. I topped it with a few croutons and a small amount of dressing. Then I got some chicken fingers for my daughter but I knew she wouldn’t eat all of them so I took one and crumbled it up on my salad. This was the perfect mix and I still felt like I was able to stay on track. Then I didn’t feel so bad sharing an ice cream later with my family. Life is about balance and making those little decisions that will add up to big results!
